Protein-Packed Pumpkin Cupcakes

Instructions: Preheat oven to 350 F
You will need 2 mixing bowls

Mix wet ingredients:
1 cup of pure pumpkin
2 whole eggs
1/4 cup vegetable oil
1 cup apple sauce
1/3 unsweetened cashew milk
1 tsp vanilla extract
Stir together

Mix dry ingredients in a separate bowl:
1.5 scoops MTS Vanilla Ice Cream Isolate
1 3/4 cups flour
1/4 cup coconut sugar
dash of cinnamon
dash of pumpkin pie spice
dash of salt
1 tsp baking soda
1 tsp baking powder

Stir together

Add wet ingredients to dry ingredients.  DO NOT over mix.  Just fold in the wet batter to the dry ingredients. Add to cupcake pan.

Bake in the oven at 350 F for 15 minutes
