Cake:

  • 1 serving Blueberry Muffin Protein Powder
  • ½ cup Coconut Flour
  • ½ cup dried Blueberries, set aside for last
  • 2 tsp. Truvia (or sweetener of choice)
  • 1 tsp. Baking Powder
  • 2 Containers of Blueberry Yogurt, 5.3 ounces each
  • 2 Eggs
  • 1 and ½ cups Egg Whites
  • 1/2 tsp. Vanilla Extract

Cream Cheese:

  • 2 servings Birthday Cake Protein Powder
  • 4 oz. Fat Free Cream Cheese
  • 2 TBSP Truvia
  • 1 Egg
  • 1 5.3oz container Vanilla Yogurt
Set out cream cheese and allow it to come to room temperature to soften.

Preheat oven to 325 degrees. Spray or butter a round 9-inch cake pan. Consider adding parchment paper to the bottom.

Mix all dry ingredients except blueberries in a mixing bowl. Add all wet ingredients and thoroughly mix. Mix this longer than you think is needed to ensure the coconut flour is completely distributed without any clumps. Add the blueberries and hand stir them into the batter. The batter will not be as thick as a standard cake batter. Pour into the cake pan and set aside.

Beat cream cheese in a stand mixer; add egg and yogurt, mix well. Add Protein powder and sweetener and mix completely.

Pour cream cheese mixture on top of the cake batter. Use a knife to lightly mix the cream cheese into the batter if you want it distributed or leave it on top for a top layer if desired.

Cook at 325 degrees for 45-55 minutes or until an inserted toothpick comes out clean.

This recipe makes a cake that weighs approximately two pounds, providing eight pieces that weigh four ounces each. It is a high protein cake that is also low in carbs and fat to fit your macros.   • 1 Serving Blueberry Muffin Protein Powder
  • 3 TBSP Coconut Flour
  • 1 TBSP Oat Flour
  • 3 TBSP Egg Whites
  • ½ Cup Cashew/Almond/Cow Milk
  • 4 TBSP Applesauce
  • ½ tsp. Baking Powder
  • ¼ tsp. Vanilla Extract
  • ¼ cup Dried Blueberries, set aside for last
Preheat oven to 350 degrees.

This recipe makes four regular sized muffins, more if you use a mini muffin pan.

Spray muffin pan with nonstick spray if not using liners.

Combine all ingredients except the blueberries in a mixing bowl and mix completely. Make sure there are no clumps with the coconut and oat flours. You can use all coconut flour but you may need to add a little extra milk that way. Add the blueberries last and hand stir into the batter. Pour batter into muffin pan.

Cook for 30-40 minutes until an inserted toothpick comes out clean.
